Vegetables with Good Friends, Good Food
Vegetables, who doesn’t need more of them? They are probably the best category of food for people to increase in their diet. Additionally, they provide antioxidants, fiber, vitamins, and minerals. They also help protect against cancer and other diseases while being low calorie, low sodium, and low fat. However, we often add those not-so-good-for-us items to our recipes. U. S. dietary guidelines recommend 2 – 2 1/2 cups of vegetables per day. I am afraid that I fall short most days.
A friend introduced me to a cooking group, Good Friends, Good Food, (GFGF). This is the same friend who encouraged us to try camping. Her food blog is Pantry Revisited and it has tons of great recipes. GFGF will focus on vegetables and cook a different vegetable every two weeks. Each member will choose their own recipe. It is, therefore, a great opportunity to see a variety of tantalizing recipes for specific vegetables.
I wanted to participate because we are home more these days and it will be a fun and productive use of my time. Also, my husband and I really need to introduce more vegetables into our diet. This should get us moving in the right direction.
